When you change the UIM/ LIM gaskets, does the supercharger oil need to come out, and be replaced? or can you change the gaskets without touching the supercharger oil?

You don't have to remove the SC oil to change the UIM and LIM gaskets. However, if the oil hasn't been changed in the last year I would change it before reinstallation.

Good time to change the supercharger coupler if its the original one.

The supercharger is the UIM. Really the only fluid to worry about is coolant. There will be some drip out as you remove the supercharger. But first when you do intake gaskets you need to drain out a sufficient amount of coolant from the cooling system.
