1st to second and so on...

I am new here, and I apoligize in advance if you all have heard this question a million times before. I just would like to know the best way to shift from first to second, and second to third without losing speed when it comes to racing. I own a 96' jetta gl (nothing special), and I just like to race people with cars comparable to mine for fun.
