Matching Wheels To Tires

Thanks for all the help so far everyone.
I've decided that I like the look of the FN01R-C too much. I'm just going to have to be extra careful with the wheels. However, I've decided that I want to go with a set of 17x10s. Now I have two questions:
1. Which offset? I've seen someone with this wheel/size with a 25mm offset and it stuck out way too far for my taste. Would a 35mm offset be further in and would it clear the calipers? What offset should I go for?
2. I want to go with 275/40 tires as they will even out to almost being exactly the same as stock. However, will they fit without rubbing and are they wide enough, or do I need to go 285?

mine are +25 offset...they stick out about an inch..maybe a bit less. But with 10" rims they'd probably stick out even with +35.
17x10 with 35 offset i'd be worried about turning clearance...especially with 285s.
as for caliper clearance, i think that's just the wheel design and not so much the offset...
i'd ask around on the wheel and tires board on 3si. lots more experience.

I did with views but no responses and I need to know quick so I can have Discount order the right ones. I have to call on Monday to stop him ordering the size I have now. I don't mind them sticking out a little as they already do.
My concern with the 275/40 tires is:
A) The side wall will be at a slant. I like it to be as flush as possible.
B) They will rub on full lock or the spring seat.
Here's a picture of the 25 offset.

10's may be too wide (depending on the offset of the wheels) in the front for stock suspension. The rear I believe you'll need to roll your fenders. I think a set of coil overs will fix the fitment issues in the front.
