Why do you want to do that?
It is illegal to do them things.

No mention of the year and engine/tranny type. Not to prod for details, but I see little value in getting these little trucks to go that fast down unpaved roads unless you're a) racing, or b) an on-site work truck with LOTS of ground to cover. Gotta be hell on the suspension...even with ZR2 pkg.
Not that I condone it, but depending on the yr and tranny, could be as simple as adjusting the vehicle speed sensor (VSS). Then it would be illegal to run on roads, but for private property duty (such as a farm), you'd be at your own risk. May I suggest a full racing harness, roll cage, and helmet? Good luck!

A PCM reflash should solve it.
