95 Grand Prix gets hot. Need help!

I have a 95 grand prix,GTP 3.4v6. car ran great but was told by mechanic, radiator needed to be replaced as it was beyond flushing. got the same story on a second opinion. I replaced the radiator, (with the proper one),hoses, and thermostat. now when i start the car, it heats up pretty fast. I havent let it heat to overheating, but the temp climbs pretty quick, and then I just shut it down. I have coolant coming out bleeder valves, and i even did the jack up the front passenger side thing, to get the air out of the system. the manual said it should take 11 qts of coolant, but only took a little more than half of that. I pulled thermostat, and checked it in water on the stove with a thermometer. it opened at 190 degrees. since it was a cheapy, i replaced it with a stant just for peace of mind. No help. I live in Phoenix, so cooling system needs to work! I never really kept track of how fast the temp gage went up before, but it goes over 200 in less than five minutes. how high should the gage go up b4 termostat opens? im afraid to just let it run. Sure appreciate any help. Need this car to run! Thanks!

I have a feeling there is still air in the system. Fill it, start it, let it heat up, open the bleeders (if your hear "hissss" there is still air in there) untill your confident there is no more air, dont shut it off untill the fans turn on. Once they do, shut it off, and make sure the radiator overflow bottle is full, and not just to the full mark, but full. Let the car cool down, and come back later and do this again. Maybe three times.
