Painting and humidity help please

I am not painting a car but the issue is the same, any advice would be greatly appreciated.
have a mid 80s TAMA superstar drum kit I want to strip and refinish.
Drum kits are finished the same as cars. Most drums today are shot with Polyester, Acrylics or Urethanes.
I have worked with Nitro Lacquer previously but now want to move onto something more current that will allow me to build up a deeper clear coat.
I live in Austin, Texas, the humidity here is high most if not all of the time.
I do not have a professional spray booth, in the past I used visqueen to create a booth in my garage, this allowed me to keep the dust down while leaving the door open to enable good ventilation.
I have two questions:
1. What is my best choice of paint for this situation?
2. What additional safeguards or steps should I take to ensure I do not have an issue with the humidity effecting my finish?

PPG make some excellent paints. I have used this brand and have had very good luck with it. Here is some online training (http://corporateportal.ppg.com/NA/Refinish/PPGRefinish/5-0-Training/5-7-OnlineTraining/)PPG offers. I think this should help you answer your question.
