usually they end up being steel or gunmetal, but now I have some Alclad I will be experimenting with some different colors to see which gives the most realistic effect.....

jus regular foil will do, then sand it lightly with a flat file or sand paper to make that used look.

Tamiya Flat Aluminium, then 50/50 black/thinner brushed over aluminium then removed before it dries(trust me, it does something, but I can't explain it) then sanded to make the used look.

Depends on the car, consult your references :p
One technique I like to use for vented disks is to first spray the whole assembly gunmetal then drybrush silver over the top. Applying the drybrush in a circular motion, mimicking the abrasion of the pad on the disc. This leaves the vents the darker gunmetal and gives the raised surface a shiny 'worked' look. After that, I hand paint the hub and caliper details. Done :D

Sounds like a top technique. I've got to give it a try sometime. :)

For simulating carbon disc brakes, is it better to use gloss, semigloss or flat black? Or any other colour?

Carbon discs are usually a matt grey in colour. But it varies from car to car, from year to year. Best find some reference photos of the car you're building.
Did you have any particular car in mind?

Just customising a model car, not making a replica of any particular car.

It depends on the car. If the brake discs aren't easily visible, I would just paint them with silver paint. If they are, I paint them with Silver pain then polish them.
If it is meant to be a old, used looking car, I don't polish them. It all depends on the model really. I am thinking of trying a chroming compound soon...
