Ok well I have an oil pan gasket leak. The shop wants $375 to do it (like $53 for the part and rest is for the 4.6 hours of labor). Would it be worth it to have them do it? or should I do it myself?

Those prices seem pretty reasonable. A local shop wouldn't touch my 97 GT and the dealer wanted 600.00 bucks to replace my oil pan gasket. It's a PITA to change because of having to drop the frame to get clearance to remove the pan. Nope, I'm not losing that much oil to worry about it at this time.

Yeah, I agree an oil pan gasket leak is a real bummer and PITA to repair. May not help if the gasket is shot but it doesn't hurt to double check the oil pan bolt torque. 125 inch-lbs. Another problem area for oil leaking is the rear main seal which may look like the oil pan gasket.
