is it impractical to change over an old automatic to a standard your self or is it one of those things you should take somewhere so it wont take too long to get done. and if it is one of those jobs how much do you think it would run? to give you some insight on my skill, in a weekend iv rebuild the motor but without pulling it all the way out, to have it running on monday, with suporvision of my father of course. so what do you guys think

so let me get this straight...you're asking if it's common to swap auto trans. for manual? yes it is. especially on the older mustangs(i.e. 79-93).
is it hard? not really. on the 79-93 mustangs they use a cable clutch so it's pretty easy. add to that the fact that it already has a hole cut into the car for the shifter(all ford back then were made manual at the factory for ease of manufacture) it makes it evan more easy.
all you gotta do is get the manual trans, clutch pedal, clutch quadrant, clutch cable, clutch and presure plate, flywheel, throw out and pilot bearing, ignition module. if it's EFI you'll need to get a CPU from another manual mustang. i'm pretty sure that's it.
this works for the t-5 trans. the latter manual transmissions use a hydrolic clutch(for the v8)
you'll be able to do this in a day with all the correct tools and parts and from the way it sounds it'll be pretty easy for you. just make sure you get a good V8 trans. a 4cyl trans will work with a 4cyl pilot bearing, but they're very weak. it wouldn't last long bolted to a stock 5.0L
what kind of mustang is it? if it's a newer one(94-98) i might be able to help you out a lillte more(V6 to V8 swap).
