You'll pay through the nose, but I think some of the convertible mercedes now come with the Blutec diesel. Used VW Beetles came as convertible and TDI

You could retrofit a convertible car with diesel. BMW E30s (3-series from early 80s to early 90s) came with diesels and also as convertibles. You couldn't get a diesel convertible, but you could retrofit a diesel into it.

Same goes for Cabrio VWs. You could drop a TDI in a rabbit drop-top
