How to properly bleed brakes

(96 Stratus, 89K miles) A rear brake cyl failed, massive hydrolic leak. Replace both sides and installed new shoes and hdwr kit.The brake resevior was empty. Refilled and bled rears, then fronts, went through 14 oz of fluid. Did not see any more air while bleeding. The pedal still travels more than it did prior to the rear cyl failure. Don't feel a spongy pedal, but difficult to tell since the harder you push, the further the pedal travels. The car does stop and I can activate the ABS if hard enough stop. Any ideas?
The rear brakes do have some drag when after re-insalling the drum which should indicate proper adjustment.

Try adjusting the rear brakes. I'm assuming those are drum brakes. Adjust them to where they barley graze the drum as it turns. Sounds like theirs just more room to travel
