Cooling fan not coming on

2001 Grand Prix SE 3100
Both fans come on when the AC is on. Neither come one when the car starts to get warm. If the car is moving the temp stays down. It gets warmer if I sit in traffic or something. I just replaced the coolant temperature sensor but it didn't change anything.
What else can I check before I pay someone to fix it?

the 3100 will run hot when idleing at a light or in traffic. the first fan doesn't even come on until about 215 degrees. the way i checked mine was to take a short drive to warm it up then i let it idle in driveway with the hood up watching the temp guage to see when the fan kicks in. it should kick in at about 215 and start cooling the engine down. if you have the a/c off the second fan should kick in at about 235, don't really know how to test that though.

I let mine sit in the driveway for 30 minutes after installing the new sensor and the fan didn't come on. The car generally gets as warm as 210 to 230 but the fans don't kick on. For the first couple of years the car rarely went above 185.

that the same problem im having that seems pretty hot took to a shop they said the fans dont come until 230-235 I dont want to blow a head gasket, is this normal
