Golf Mach 3 96 - Fails to start after a long journey

Hi,

Can anyone help me with my problem...

My Golf's done 98,000 on the clock. Everytime I drive at high speeds for 30 mins or more, switch the car off and then attempt to start it again, the engine just chuggs and fails to ignite into life. However opening the bonnet and letting some cool air hit the engine for 10 mins sorts the problem and it starts fine. I've recently had the thermostat changed so it can't be that, but it seems the engine overheats and then if the car returns to a slow speed directly after the 30 mins or so of higher speed driving, the car sometimes stalls. It's almost as though it doesn't like the fluctuations in speed, and the car when cutting off (both when done intentionally and when done for me) takes 10mins to start again.

Any help on this would be much appreciated. Thanks in advance.
