How do you get to the rear spark plugs in a 1991 lumina 3.1?

There is two engine roll restrictors on top that span from the motor to the radiator support. Take the bolt out of them and flip them out of the way so the motor can pitch forward.

There's a few ways to make it roll...if you have a ratcheting tie down you can pull it forward...

I just start rocking the whole car back and forth in park, this makes the motor pitch around...when you get it going good enough that the motor is flipping over pretty far, jab the e-brake and that will lock it in that position, provided your e-brake works well...then I block the front wheels, because if it creeps, the motor is going to roll back down.

I'd suggest wedging a block of wood or something in there between the motor and firewall to prevent it from coming back on you while working back there, but truthfully, I never do. I'm kinda dumb like that. With the wheels blocked, it ain't going anywhere...not fast anyway.

Make sure you don't forget to connect the torque struts back up when done, or the motor will roll forward and smash the radiator when you put it in gear...I only say this because I've seen it happen, people get distracted, you know...
