'90 5.0 LX Thermostat Spec?

I replaced the thermostat and now it seems the temperature will run high for a short time, then drop back to normal. Seems like I may have put the wrong thermostat in. Don't thermostats have differing temperature settings? What is the correct setting for my vehicle?
