I'm going to replace my valve cover gasket in an attempt to stem my loss of oil. Is this a difficult job for a DYI (I have done work on other cars, but not this before)? Any tips?

In a nutshell.
I'm don't know for sure on your 91, but my '89 has a wire loom over the upper timing belt cover that has to move a bit and plug wires if they are top mounted.

yea the there a 10mm bolt and wire loom that goes over the cam gear, 3 bolts across the top, and its out. Check the condition of your spark plug tube gaskets located under the valve cover. Also i recommend checking the condition of the 3 valve cover gromets that are on top too.

Last few I've done had the grommets included with the cover gasket as a 'set' from Felpro.
