I just recently purchased a set of 17" wheels and was wondering if anyone knows how to prevent the tires from rubbing my rear fenders?

roll the fenders, less wide tires or add negative camber

Yes, but in addition make sure you have the right size tires or offset. If the tire size, wheel size, and offset are right you shouldn't have any rubbing. When I put 215/40/16 on my Delsol I had to role the fenders, but this tire size is to big.
