Can someone tell me the correct way to set brakes after replacing them. Don't want to heat them up. I heard one way is 30mph then slowly stop 30 seconds. Is this true?

Pump the pedal several times until you get resistance to seat them first, then, yes, do several gentle stops from 20-30 mph.

I also read once not to do emergency braking for the first 200 miles, but i don't know how you're supposed to accomplish that if someone pulls out in front of you...

Three mild firm stops from 20-30mph.

Then 1-2 really firm stops for 60mph.
