fed up of electronics

I was wondering what was involved in taking something like a obdII controlled pick-up truck and ripping out the engine and trany and dropping in a good old fashion carburated engine. what about the gauges? or just swapping the engine and keeping the trany? Is this a useless idea or am better off just getting an old truck, 86-down?
