Yes you have to upgrade your fuel system but most kits will come with it.
This is the most popular supercharger system on the market for the price.

With the vortech kit
On a automatic your looking at maybe 3-4mpg drop in city and 2-3 drop in highway.
On a manual 2-3mpg drop in city and a 1-2mpg drop in highway. You could always off set this by going with a different set of tires.
Saleen Parts are built to a different standard than your GT you would have to do serious work to you engine to keep up with strain it would add.
As far as gas mileage it will most likely hurt it and before anybody comes in here and starts fucking arguing with that. Cars that come factory with Turbos and Superchargers in order to gain mpg increases, they are built to specification to work with that supercharger or turbocharger.
They make forced induction systems you can add to your car to get increased mpg but most of the time their hp boosts aren't worth it.

If you are that worried about gas costs do not install a supercharger sell your mustang and get yourself a Honda.
As far as your answer goes most likely you will need to increase your octane rating to premium.
Determining factors:
Current Compression Ratio
Current Fuel Injector /lb pressure
Current Fuel Pump GPH delivery
Current Detonation Timing
Then compare
Supercharger CFM
Supercharger PSI
Supercharged Fuel Injector /lb pressure
Supercharged Fuel Pump GPH delivery
Supercharged Detonation Timing

there is only 1 saleen supercharger system on the market that requires an internal engine upgrade. the series 1,2, and 4 (the most common on ebay now) do not. saleen cars (the s281) come with stock GT engines. to be honest the saleen supercharger kit will include everything you need to basically have a [power level] saleen mustang, which are good [reliable] for many many miles. a vortech or centrifugal type supercharger will require a rebuild every so often, the eaton-roots type (series 1,2) or whipple (series 4) will not. the series 5 is the one found on the s281-E model which does require a internal engine rebuild. the vortech/paxton/procharger have more potential peak power on these cars, but the saleen blower will be more suited for a daily driver in my opinion.
and yes, your MPG will drop, its the price you pay for more power. also, you will have to run premium octane if you dont already

ok, so all and all which would you advise i get??? they're both around the same cost and if the saleen SC last longer on average, it sounds like i would be better off going with the saleen and to be honest i am strongly looking into turning the GT into a saleen clone, body and hp wise.but i still would like to get your guys opinions.... will both fit under the stock hood??? and will the stock tranny hold up to 425ft-lbs or will that need to be upgraded

the saleen SC could produce up to 425 ft-lbs torque. will the TR3650 tranny hold up to that or will i have to do a tranny swap??and will those SC fit under the stock hood?? thank you all

it might, depends on how it was driven, i know people with over 400 HP and are fine with them, but my buddies mach 1 has 12000 miles on it, stock, and every time he takes off he spins straight through second and chirps third, the third gear synchro is gone, there is actually a tsb out for them, if you could afford it, i would have a T-56 put in

the saleen cars do not come with upgraded drivetrain except for a rear end [as an option] so yes you will be fine. i would advise the saleen blower.
saleen clone on the other hand i am not a fan of, unless you are leaving off the saleen stickers stripes and banner

I have an 02 GT convertible. ATI ProCharger with 10 lb pulley gave me 405 HP at the wheels. I lost 1-2 mpg overall, but it really depends on how you drive. My mileage runs 14-15 in town and up to 22+ on the highway.
Before the SC I was WOT most of the time :) Now, it's a lot more serious and I find I'm not WOT much at all (depending upon who is in the lane next to me). That probably affects the minor difference in mpg.
You have to go with the bigger (42 lb) injectors (I had to buy them in addition to the HO ProCharger kit) and a good fuel pump (255 LPH included in the kit). It's very important that you manage fuel flow and air/fuel ratio, and the pump and injectors contribute to it. In addition, the tune (chip was included in the kit) and MAF range need to be coordinated.
The bottom line is that I had a good, reliable, quick little cruiser (14.8 1/4 mile at mile-high altitude), and after $5,000 I have a very quick car that is often in the shop (gauges, tuning, pulley changes, SC oil changes, fuel pump failure, trying to dial in the AFR etc.). I've had times I've had to walk home or nurse the car back to the shop. It's been 3 months now and it's starting to settle down.
I don't know how fast it is because (assuming it will go faster than 13.5) convertibles need a roll bar to meet safety rules.
Would I do it again? ABSOLUTELY!! Although this is not my only car. If it was my only car I might not.
