Compressor makes a sort of rumbling / grinding noise only when engaged. Very quiet when un-engaged. It has plenty of pressure (Around 45lbs) and does blow cold.

If I let it go and it fails, will I be dead in the water, or just have no ac ? I know a new compressor means big $$. Compressor swap shouldn't be done at home ? I'm really afraid of being towed again, that was a huge expense, compared to which most of these maintenance items are small $$.

If you are going to drive it like it is unplug the compresser.
If you keep on using it with the compresser running it could lock up and burn the belt or pulley off and then you will be a dead duck.
