My '01 has a sticky gas pedal when I start off. After the initial acceleration, the stickiness goes away. It's almost as if the pedal is stuck until I have to put so much pressure that the car jumps forward (or backward for that matter).

My first instinct is you should clean out the throttle body. Very easy. Sits down stream of the air filter and mass flow filter. They sell cleaner for about $3 a can. Will take you about 15 minutes from start to finish.

I second.
When I was at it I had my son floor the gas peddal so that I could clean the back side of the valve plate as well-- lots of junk there too.
The throttle response became so much smoother.
