Trans Temp Gauge Mystery

Just wondering if anyone else has had this happen.
I have a 2003 F250 6.0L, 60K miles. After about 20 minutes of driving my "Check Gauge" light will flash and my transmission temperature will go straight up to hot, then it will flicker off and go back to the normal setting. A minute later the transmission temperature will either go down to cold and stay there for about five minutes and then go straight up to hot or it will just go back to hot setting with the "Check Gauge" light on. Every time the "Check Gauge" light is on my Tow/Haul light is blinking. Sometimes the light will go off if I go over some hard bumps. I've had it to the dealer and no error codes are coming up for the transmission and when they are able to duplicate this problem and they mess with the wires under the dash, it goes away. If I just let the truck idle for 30-40 minutes, this problem doesn't happen, only when it is in gear. It sounds like a loose connection, but I'm confused as to why it takes 20 minutes for it to start happening.
BTW, the dealership wants to replace the wiring harness ($1,000) to see if that fixes it and then replaces the PCM (more $$) if changing the wiring harness doesn't fix it. I'm all for paying it if that's what it takes, but it doesn't feel right.
