How long to wait, after application, before I polish:
1) Clear coat
2) Automotive laquer (is it the same stuff as clear coat?)
3) Gloss enamel
4) Acrylic
The FAQ says to wait a week before polishing clear coat, do you really need to wait that long?

read the back of your spray can, most say wait at least a week, even tought the paint seems dry 30 minutes after the job, its not. of course, it helps if you got a baking/curing oven (i only have to wait few hours)

If you are drying the model in just room temp.....at least a week before you polish it.
You have to wait for the paint to harden and gas first

Can I even polish gloss enamel? How can I get more shine out of my cars painted with enamel?

yes
gloss enamel actually polishes quite well
better than acrylics, IMHO
i usually wait about 2 weeks
sand out any orange peel or dust specks, if any
then polish
then rub down with an eye glass cloth
then wax
then rub down with a glass cloth again
