Unfortunately I don't have my Haynes manual handy but I'm sure it tells you step by step including torque specs for when you put it back together. Don't have one? You should get one, small investment, big return for do it yourselfer.
Otherwise, here's a link.

I need to do the same thing on my '85 S10 long bed. I've got the bearing carrier (get it at NAPA, they run about 35-40 bucks; part is made in Canada). From what I've read in my '85 S10 GM shop manual, you will need the services of a machine shop to press off and on the carrier (unless you want to use this as a good excuse to get that nice 1 ton press they have a Harbor Frieght :-] ).There is a specific way the carrier faces also.... it should be in the instructions with the new part... and I beleive you need to pack some grease into one side of it before installing it...again, check the part instructions. I've heard of guys using somewhat "grotesque" methods for R&R-ing the carrier (big hammers, torches and lotsa four-letter words) but the best way will be to remove the drive shaft and bring it and the new carrier to a good machine shop; they'll have the equipment to do the job right w/o ruining the new unit or your drive shaft.

If you can find a shop that balances driveshafts take it there. That is what I did with my '91. The instructions that came with the last bearing I purchased at NAPA recommended having the driveshaft balanced after installation. I just removed the driveshaft and took it to the shop. It wasn't that expensive.
