When the fuel reading starts going all whacky it indicates you have a problem with the fuel level sensor/sending unit located with the fuel pump assembly in the gas tank. Replacing it should correct your problem.
If you get the work done at a dealer it can be expensive possibly up to $400 - $600 including parts. Replacing the part(s) does not require dropping the fuel tank. There is an access cover behind the rear passenger seat in the trunk where the complete fuel pump assembly can be removed for repair and/or replacement.

You can buy just the fuel level sensor if your fuel pump is ok. The AC Delco part number is SK1195, (GM #19121316) and dealer cost is $154.46. I work at a Delco distributor in Flint, MI, and can sell it much cheaper, (+s/h). PM me if you're interested, and we can discuss the details.
