210 too hot???

:confused: hi guys i'm back again, i seem to get alot of help here and i really appreciate it, i'm still learning this car so i have alot of questions to come, when i drive my 97 GTP on the freeway the temp guage shows about 150 but when i'm sitting in traffic or at a stoplight the guage moves to like 190-210, is this something i should be concerned about? or is this normal?

water boils at 212 degrees at sealevel. with boil over additatives antifreeze boils at a higher temp but the cooling system does become pressurized at about 215 and usualy holds there, kinda like a pressure cooker holds a higher temp. under adverse conditions at about 235 degrees the pressure builds past 15lbs and the coolant flows into the overflow resevouir.
190 to 215 is within normal operating temps. i run a 195 thermostat and when test driving with a scanner attached the guage reads about 200 but the scanner shows a constant 193.4
