I'm trying to replace my head gaskets on a '01 tacoma. I've already got everything off to get to the 8 main torx bolts, but it still won't but, can anyone help me find the bolts that might be holding it in place.

I have to assume you have a V-6, you didn't say. As I understand your question you have removed 8 head-bolts from each head (these are 12 pointed bolts) and the heads will not come off.
There is an additional bolt in each head. It should be near the front center of the left head (looking from the drivers seat) and in the rear of the right head. They are recessed hex bolts (Allen head, 8mm). Remove those bolts and the heads should come off. If this isn't what you wanted let us know.
