So I need to get my 2000 grand prix inspected and the brake light is on, thus, I'm fearing it won't pass. The brakes work fine, the pads are fairly new, and the fluid is full... Any ideas as to where I can start troubleshooting?

The BRAKE light illuminates when there is a hydraulic related problem with the brakes and/or when you have the emergency brakes on. Test your emergency brakes for switch operation. Also, the BRAKE light gets a signal from the brake master cylinder reservoir level sensor when fluid level is low. Since level is visually OK maybe it is sticking. Disconnect the electrical connector to the level switch and see what the light does. It supplies a ground to the BRAKE light. If light remains on it could be an instrument panel (IP) problem. If light goes out then it is a problem associated with the level switch or wiring. How is the ABS light?

The brake warning light normally indicates either low fluid or low system pressure. Like Bnaylor suggested, if the brake fluid level is ok, try unplugging the fluid level sensor in the master cylinder or seeing if it's stuck. Low brake system pressure from a leak or bad/crimped hose will normally cause the pedal to sink as it is held with steady pressure.
