2000 v6 Manual Tranny idle problem

Yes, I have a manual transmission. I think I'm the only one but if anyone out there has a 2000 LS v6 3.0 5-speed manual transmission then I have a question for you.
While driving... If I take my car out of gear, in other words, let it coast the engine will continue to rev at the last RPM. Also, when I come to a stop and take my car out of gear, the engine will continue at a high RPM for a few seconds. In another situation, if my car is rolling down a driveway and have the clutch down, she will stall.
I've never had a car that when I engage the clutch the engine RPM doesn't drop immediately. My dealer says this is normal. He said it is to protect the transmission. Any ideas? or is it me.
