Idle Problems

Hey Ya'll i have a 91' Dodge Stealth R/T with a bit of a problem. Me and my friend have spent almost a fortune trying to find out what is wrong with this thing between diagnostic fees and replacing what they say is "wrong" with it but i'm pretty much exhausted with they're opinion so now i guess i'll see if i can get a new point of view from ya'll..
When i'm driving the car in the morning it runs fine until i get the temp to about normal temp then all of a sudden it start skipping RPM's and then it feels like its bogging down and has no git up and go and then it will jump from 2.5k rpms to about 6k to where i'm almost red lining it and then when i shift up a gear it drops to like 1800. the two most recent things we've replaced was the Ignition coils all 3 of them and we got a new ECU. Any insight ya'll may have i'd appreciate thanks.

What does the temp gauge do? Does it stay in a normal range or does it overheat?
Is the idle erratic in neutral? If so...what does it do just sitting there in neutral?
How is your coolant level looking?
When is the last time you replaced your thermostat?

When its in neutral it idles fine and it doesnt overheat or at least it doesnt appear on the gauge that it is, i think its still the stock thermostat. I havent checked the coolant yet.

Okay, well we really need more info. First off, this is why I recommend always troubleshooting prior to just replacing random parts, but whatever.
Are you getting a check engine light? If so what is the code? If you don't know how to read codes, let me know and I'll get you directions.
Does it misfire at all?
What is the mileage, and when was the last tune-up? How long have you been on the same spark plugs?
Lastly, why is the name of this thread 'idle problems', if it idles fine? So you only have issues when you are driving? I'm still a bit perplexed as to what exactly is happening other than your car isn't running right and the rpms are erratic.
Can you please give a very descriptive explanation of what happens when this problem occurs. What gear, how much gas you are giving it, as much as you can think of.
