Ideal temperature for paint bake?

It was suggested to me from a "high end" paint/body car shop all car repainting is inferior to the assembly line painting process b/c high enough temperatures cannot be achieved.
Another shop told me that their baking temp of 180 degrees F was adequate and that their painting process was similar or superior in terms of chipping and wear to the original paint job.
Any suggestions on baking temperature? What should I look for from a body shop?
