The exhaust pipe size for optimal power and torque for your v6 would be 2.5". Anything bigger, you'd actually lose low-end power. But, if you plan to go turbo later, go either 2.5" or 3".
I've seen these options on some, but I can't comment on their performance. Sometimes, it's just for looks.
A BOMZ N1 Evo Spec muffler
a Bomz 4.5 tip, straight cut
2.25 from headers, with no resonator, and 4.5 outlet BOMZ exhaust
As for price it depends on where you get the work done. I don't know prices for labor and parts in Australia.

You can install anything you want...
It's not any more complicated than cutting a pipe & welding a new pipe on.
There isn't any performance to be gained, just sound.
Deleting the cat is worth about 5bhp peak if you can.
The y-pipe is horrible. A descent custom one should add 10-15bhp. Most of it at the mid-upper rpm range.
The headers are fine. Extremely expencive to buy / custom build, don't gain enough to justify the cost until you've made enough power to blow the engine (375-450bhp) & rebuilt it.
