what is going on when the oil pressure gauge rises to max when accelerating and drops to 30-40 when idiling?

30 to 40 is great oil presure at idle. When your RPMs raze so will your oil presure. If you think you have a gauge problem I would change the sending unit.

well I am trying to figure out some engine noise (squeeking). the oil pressure hasn't been that high until about 2 months ago. when I am driving regular the pressure gauge reads 80+. I am wondering if the oil is not getting to all the places it needs to.

I would disconect the serpentine belt and start the engine if there is no squeek you know its not in the engine. Having had a 87 myself I'm guessing its the belt tension pully. With the oil presure try and change to sending unit. I dont think oil presure is your problem unless the truck over heated bad before and the oil got fryed to the block.

My truck did this same thing while under warranty. I expected the worst, but they replaced the pressure sending unit and it fixed the problem. Might look into this.
