Track refers to the distance between the center of one wheel to the center of the other wheel on the same axle. In other words, the width of the axle. You can change it slightly by using wheels with a different offset. Wider is generally better, but can cause the tires to rub on the fenders.
Taking the AWD system from one car and putting it on another is possible, but is pretty close to building a car as far as work involved. Unless it's a front wheel drive Subaru, I've heard it's pretty easy to convert them to AWD.
