Just for the record, I knew what it meant. Correct me if I am wrong but I am pretty sure the name came from a race known as the IROC (international race of champions) in which everyone drives a car that is exactly the same to everyone elses?

IROC is the International Race of Champions for race car drivers. For a few years the people that ran the race picked the Z28 for their cars and Chevy decided to use this and made a special IROC Z28 Camaro.

If you ask most people "what is IROC?" they'll probably say, "oh it's a type of Camaro." Most people don't link it to the actual race.
