if its something that's fast enough that I can wait I usually do. I usually stand outside the garage instead of in the waiting room too. I've caught several things and corrected them while there (wrong grade oil, mounting directional tire backwards on rim)

Though I can understand peoples need to watch us so that we don't screw up, its really quite annoying when we can feel a hole being burned through us from your eyes.

I have a very good mechanic, he doesn't try to do anything undesireable so if it's a quick fix i stay but if it takes long (like 1/2 a day or so) i go with someone else and get a ride home with him

This is exactly why some shops have this sign:
Labor $85 hr.
If you watch $120 hr.
If you help $160 hr.

I don't pay them $85 an hour to screw up and waste my time, he wasn't putting in the wrong oil or mounting the tire backwards for a reason.

I completely agree. A good mechanic wouldn't mind a good firend or a good, repeat customer watching, (well, not too closely) but usually watching a mechanic is a sure-fire way to piss him off and/or distract him.
Let the mechanic do his job in peace.

i used to hate that when I worked at firestone. having people watching over your shoulder, but I have to admit, on the rare occasion i have to take my car somewhere, I have the urge to go "supervise" the tech.
