02 Stratus 2.7L Gas Problem...Maybe

I labeled this as a gas problem but I dont really know what the issue is. I just bought this car a year ago and I sorta had my gas cap stolen, so I went out and bought another one. Ever since then my car has been jerking when i take off or it will always jerk if you press hard (fully) on the gas pedal. The engine light of course comes on but the next day it will go off. And unless I press firmly on the gas during take off or hit the gas overly hard while in top gear it will jerk on me and then the engine light will come on again. Its been doing this for 3 months. It goes away for a while then comes back.
I have replaced the gas cap 3 times with multiple vendors and each of them come with the same results and yes I make sure I turn it till it clicks. Where should I start?

Is there anyway to get the check engine light code from this. Someone said turn my car on and off and watch for the flashes but the engine light doesn't flash or I am very impatient.

This doesnt always happen. I know I said when I do this it does that but I really mean it goes in spurts. It will act up and do that maybe 3 times a week randomly it seems. I will go to take off it will spurt and then the scenario will happen as described above. The next day the engine light will disappear and then the car will start acting normal again until its next spurt. Lately it seems to be happening more often 4 to 5 times a week. I drive long 45 minute drives to work each day so I am a bit edgey about my car acting this way.

I've had two dodge cars, a stratus and Intrepid where the transmission shift sensor went out or was faulty. It did almost the same thing then one day I couldn't shift out of second gear. Most parts stores can read the code for free when the light comes on.
