I'm a bit confused about polishing...if anyone can answer these questions, I would be very thankful.

I have a 2000 Grand Prix GT champagne/gold color. I have never polished it before. I have read in some forums that polishing takes away the clearcoat. So what exactly is the point of polishing?
How often should I polish my car in order to avoid this risk?
I have a somewhat light scratch in my door panel, would polishing help get rid of this? If so, any brand that is recommended?
