First thing to reccomend is a big air intake. It'll cut the life of your MAF in half, but it helps a little. A cold air intake if you live in a year-round fair climate region like socal or florida. These can be found anywhere from AEM, Neuspeed, Injen... Next would probably be catback exhaust or a chip. Both will run you between $600 and $800 for a quality part. Neuspeed's exhaust seems to have the best "tone" but what I've read lately Greddy's G2 exhaust seems to push out 2 or 3 extra horses, but no idea what it sounds like. Supersprint also offers a very good exhaust that probably sits between the other two for a balance of hp and tone. There are a variety of chips to choose from. Talk with the manufacturer and make sure that the chip won't be detected by the dealership. Sounds odd, but they'll know what you mean. If you want some control the bolt on an upper strut brace. Doesn't look like it'll do much, but it truly is a HUGE difference. After that, if you've got the budget, you can go crazy. Supercharger will run you about $8k but a stage 3 will bring your hp WAY up. Nitros, but that's like putting your engine on cocaine. Headers and a performance cat. Sport springs... on and on and on.

Best advice... google. Search for "2000 Jetta VR6 performance" and you'll have plenty to keep you busy.
