Lets say that I buy a fairly good airbrush. Now that I have one, will I be able to hook it up to any compressor if I find the right adapter and have it work properly?

in a word yep :D . you wanna find a compressor with a pressure regulator so you can set it at the desired PSI and just spray away with constant pressure. if you get an air brush i highly recommend a compressor. cans are no fun, after you buy about 8 cans you prolly could have used that money to go out and buy a good compressor for about 80 bucks. oh and another little tip try and find a quiett compressor, just incase you wanna stay up late modeling and not wake up the whole house

If you live in the US, I'd recommend going with this compressor:

http://www.chpower.com/catalog/catalog_detail.asp?categoryID=100&subcategoryID=2241&pagenum=1&context=

For $100 (at Wal-mart.com) it comes with a 2 gallon tank. The compressor spends about 3 minutes filling up the 2 gallon tank which is good to go for 20-25 minutes of SILENT airbrush use. Buy a companion 10-12 gallon tank for even more silent fun.

Alternatively you can go the CO2 route. A CO2 regulator is available on the web for $60. Check your local beer distributor, restaurant supply, beverage bottler, or welding shop to see if they refill/sell CO2 tanks. A 5 LB tank will cost you $70, and refills are $5-10. You'll have to refill every 4-6 months.
