"On a late (after 73-74) engine, early cylinder heads will improve performance. A 8.5:1 Compression engine with 76cc heads will get a compression ratio of approx 9.5:1 if earlier 69cc heads are used. 69cc heads can be found on many late 60s and '70-'71 engines."-Camaro Source
From this paragraph, I interpret that i can go to the junk yard and try to get myself some heads off, lets say, a 69 Nova and through them on my '79 Z28 350 5.7L. Is this what i should be thinking? I heard it's easy to switch out heads, but I've never tried. What do you guys think?

Probably about $350 bucks. See if you can find a place that will allow you to use your heads as a core for rebuilt heads that you want. They may require same for same but it don't hurt to ask.
