my mustang seems to sit lower in the rear than the front. does nebody else think that the rear shocks may have collapsed? or what do you guys think.

It's a common thing among these cars that are that old. It's just showing it's age with saggy springs.

would it be a good idea to replace them soon or will they hold out for a little bit

They will hold out for a while. I drove my GT for 6 years with saggy springs. But it will not hurt to replace them, not to mention the improved ride quality.
