I have a 2001 1.8 Jetta, I know, that's my first problem! Anyway, after having multiple problems with this car, there is one I just can't take, it's making me crazy.
When the car is cold, between 20-45 deg. F. There is a squeak in the dashboard. I can turn the defrost on and this seems to heat up the dash enough to make it expand, causing the squeak to stop. I guess I want to know the easiest way to get to the support bolts for the dash. I know someone has had the same problem. From reading the threads for this car, we're all in the same boat!!

Which side? I've had loose passenger side air bag bolts that let it squeak.

The squeak is on the driver's side behind the instrument cluster. I can push on the dash while driving and the noise stops!!

It's not easy to get to some of the attachment screws, but taking out the cluster can get you access to a few.
