Do anybody every change the oil pump on their Bird, if so what is the difficulty rating if it is 1 to 10.
What is the process I need to go though.

You will have to remove the front timing chain cover & timing chains.
I'm not sure if you have to remove the oil pan. You probably do.
The oil pump is #33.

Here you can see the oil pump behind the timing chains.

If you're mechanically inclinded a 2-3, if not a 10. If you want to do most of the work on your car then go to helminc.com and spend $80 on the factory service manual and $32 on the electrical and vacuum troubleshooting manual. Best money you will spend on your car for most of your answers.
