Getting ready to go here in a week or two.
454, Mild cam, 11:1 Compression, Etc
Thinking of a 750 CFM Carb (750 Holley is currently on it). Want to maintain gas mileage, and performance, don't want anything difficult to adjust / maintain etc: What say you:
Holley - Edelbrock - Demon - Other?
Electric Choke - Manual Choke?

There's no such thing as too much carb, just not enough motor. I'm with 89iroc, go with the 1250 and just keep adding things til it runs good. :biggrin:
89 started a thread in the performance subforum called "carb opinion", ya might want to look at that thread to get an idea of what brands people like and for what reasons.
I personally like Holley (I'm trying to do the S10 on budget so I'll probably stick with Holley for now), however the Demons are superior designed versions of Holley's. But they do have a certain "pain-in-the-ass" factor that goes with them. Depending on your setup, they might not need to be tuned at all, OR they might need constant tuning depending on temperature, altitude, humidity, day of week, moon phase, solar flare activity, or color of your shirt while driving.
Edelbrock's are better versions of quadrajets. They are way more user friendly but some people (self included) don't like the performance they offer while others think they out-perform Holley's.
A 750 seems right as long as you have a really mild cam.

edelbrock will give u performance while still getting good mpg. plus there a lot easier to work on. just my opinon but id say go with edelbrock
