refinishing cookiecutter rims

I plan on refinishing my cookie cutters this winter their pretty bad. The clearcoats chipped and cracked and the black center is faded.
My question is can anyone tell me the correct "factory" sheen level on the black ? Is it satin, semi-gloss or full gloss? Also on the clearcoated aluminum outer rim what sheen level is that.Thanks
