Is the ceramic coating worth the xtra $$$. Does the coating keep the under temp hood as cool or cooler than stock manifolds and keep them from creating hot starters?

Well, you can get the same cooling affects from header wrap which is alot cheaper but you cant get the same looks, if you want the same performance but are on a tight budget go with the header wrap, but if you have the extra cash to shell out, go for the ceramic.

The term "ceramic" has become a generic term for coating headers. In fact, there are several types of coatings available for headers. The most effective is the thermal coating applied by people like Jet Hot, Swain, Thermal Tech. Those are the headers that look like they've plated with aluminum. The thermal barrier is the "hot lick" (pun intended).
What Johnny says about header wrap is correct. It's an inexpensive way to lower the temp in the engine compartment. What header wap does NOT do for you, that coating does, is protect your investment from the elements. A well-coated set of headers will not rust out nearly as quickly.
