i have a 1996 sunfire problem with heat overheat . i changed the head gasket the thermostat and vacuum the air out of the coolant system what else could it be????

Make sure the fans are coming on at the appropriate temperature. If they don't work this could be your problem. Also make sure the water pump is pumping water. Finally, check your hoses, one could be blocked or being sucked shut while the engine is running.

How about telling us if you are losing any fluid! Is the level always full or are you adding all the time.
Is the water pump working?
Is the thermostat in the right way? Is is directional you know.
You need to provide much more info if you would like online diagnosis

it seems to keep the fluid and for some strange reason the fan is always on .The thermostat is in the right way and the waterpump seems to work .I vacuum the air out of the system which gives me heat in the car but it also overheats the motor

open the cap and start the motor, is the coolant moving in the radiator, do the hoses get stiff with pressure when the thermostat opens? if not, your buying a water pump. have fun, I hear it's a pain in the butt.

are you SURE the sensor is working correctly, it may be reading hot, but is really not. The fan may be turned on as a failsafe to keep the motor from overheating.

check the ect sensor, (engine coolant temp) they're a common cheap problem. It controls the fan and the temp guage. Also keep a mental note that the temp guage gets pretty high before the fan comes on.
