My daytona needs 185/70-14 but I already have a set of 195/70-14's laying around. My question is, could I put the 195's on it and not worry about tire rub and hitting my shocks and struts. Is it safe?

its probably fine, it'll just make your speedo read a tiny bit too slow

The overall diameter is probably about a 1/2 inch greater, so you should lose about 1/4 inch of space in clearance. Most tires wear this much by the time they get close to the wear bars.
You will probably need about 1/3'rd of an inch behind the tire. This is probably fine as well. Check your current tires to be sure.
Note: This assumes the same model of tire is used.
Different brands, or model tires, could have a bit more variance.
